Paleo Messy Veggie Scramble

Paleo Breakfast

Olive oil
Black Pepper
5 eggs (3 whole with yolk + 2 whites)
1/4 of red, green and yellow bell pepper chopped
2-3 mushrooms chopped
half  – a whole onion chopped ( yeah i know what your saying…holy cow! I love my onions what can i say)
a clove of garlic minced or chopper…whatever floats you boat
5-10 kankong leaves (no stems. save those for another dish)
1 Gala apple

1st heat your skillet, frying pan for you Saipan locals, at medium to medium-high heat. Once hot, coat with olive oil. Not too much where you are deep frying some eggs maybe just a cap or a little bit more. You just want to give the pan a nice coat, but at the same time not add too much. Once your oil is nice and hot…you can tell when your oil is hot by swirling it around and it starts to flow similar to water. Now its time to place all those delicious veggies in. Sweat those veggies (onions, garlic, mushrooms, bell pepper, out. While your veggies are cooking crack your eggs into a bowl and start mixing it with a fork make sure to mix everything nice and good (no whites all yellow like the sun).

Now that your veggies are nice and cooked the next step is to spill the eggs over those veggies. Cook until you see all your eggs are nice and golden. Its going to be hard to flip your scramble and make it pretty so just try your best to keep it in the pan. Once the eggs are cooked plate it, sprinkle some black pepper, crush those walnuts and place them over the scrabble and finally cut up a apple to make your paleo breakfast meal complete.
